Lunches on a Budget

I don't know about most of you but as a homeschooling family we are a one income home and with that comes lost of different obstacles such as budgeting and a big part of a budget is the groceries. Now we have a small family so its not as big as some of the other families I know but it still affects us greatly. Especially when we want to eat healthy and be healthy and when I have two big eaters. I swear my 7 year old eats as much as a grown man and some days as much as two grown men! My husband also prefers homemade meals than going out and spending money on things that may not be that great for you and just wasting unneeded money. I am VERY thankful for that!

On Sundays I prepare 5 day of lunches for my giant one (the hubby) so he can take them to work for the week (some weeks I do it for my kiddo as well because he likes to be like his daddy). This week we did something super easy and super cost efficient. I made him a Loaded Veggie Salad from a recipe I found on Pinterest (FYI I love Pinterest and have def made my share of Pinterest fails!) and it was super simple and for us I got a lot of the ingredients cheap with coupons (I also love to coupon! lol). I think the meal cost us about $5 and I was able to split it up into 5 days worth of meals!

I also made him a Spanish Rice that came out to about $3 to make for a total of $8 for 5 days worth of lunch! Now my Spanish Rice I don't follow a recipe but I can try to figure out one to post later on if anyone actually would be interested in it.
